Turkey Day - or Not

I hope that everyone out there had a great Thanksgiving, and if you don't celebrate it, at least had a good week.  We had a rather non-traditional feast of enchiladas, cheesey potatoes, green beans, and macaroni and cheese.  For dessert there were Girl Scout Cookies and chocolate chip cheese cake with lil' smokies to snack on all night.  Needless to say, I ate a lot and there are still tons of leftovers which I will enjoy for the rest of the week!
